The first photo was taken right before bringing the car in to the shop for a rear bumper repair. The second photo is how I received the car after work was completed. The mechanic said the crack must have already been there and heat caused it to further expand. How plausible is this? If you look at the first photo there does seem to be some mark there to the right of that sticker. But is it possible for that crack to form a line like that in the way the mechanic said it did?

Your windshield was chipped already in that first photo. A crack developing may have been due to the work they did, but it also may be coincidental. But you have proof right there you had a pre-existing chip, and it happened to expand.
Do you have windshield replacement insurance?

It will crack very fast like that only when it changes temperature fast, for example washing a car that just sat out in the sun.
